Cauliflower Soup & Prosciutto Sandwiches
(Do not remember where I got this from!) A family fave!
- -1 Tablespoon olive oil
- -1 yellow onion, sliced
- -1 head of cauliflower, chopped
- -2 Cups chicken broth
- -2 Cups milk
- -2 Cups 8 ounce grated white cheddar cheese
Heat the oil over medium high heat, add the onion until soft, add cauliflower, broth, and milk. Simmer until tender, about 15 minutes. Puree the soup in the pan with a handheld blender, or work in batches in a standard blender. Stir in 1 2/3 cups cheddar cheese, 1 teaspoon salt, and 1/4 teaspoon pepper. Divide soup in to bowls. Add olive oil and cheddar and pepper. Serve with Prosciutto Sandwiches. 🙂
- -4 small crusty rolls
- -4 ounces sliced prosciutto
- -1 Cup watercress, trimmed
- -2 Tablespoon olive oil
Cut rolls in half. Layer the bottoms with prosciutto and watercress. Drizzle with 1 Tablespoon olive oil. Top with roll halves. Eat!
